Braces-Friendly Meals

Almost exactly two years ago, I got braces.  Why?  I felt like my teeth were moving that that my snaggle-tooth was getting more snaggly.  I had a chance to get braces when I was 16, but my vain 16 year old self was very concerned about her senior pictures.  Also, 16 year old self had no idea about the wonders of photo shop.

So, I decided to take the plunge (before my children need braces.)

Bacon & Caramelized Onion BBQ Smothered Chicken

I know, lengthy title, right?

I just couldn’t think of a more concise way to describe this yummy chicken recipe!

It all came about when Hubs got home from a 10 day work trip.

It was long.  And Dude and Spud have a tendency to complain about everything I cook when Hubs is out of town.  So I pretty much let the kids live on mac & cheese and sandwiches while I spend the week scrounging around eating whatever.

Needless to say, I was a pretty happy lady when Hubs got home.  Plus he was pretty psyched for a home cooked meal after eating out for a week and a half!

DIY Chicken Stock (for Free!)

This might be old news for a lot of you, but making homemade chicken stock for free, with ingredients that would normally be tossed out was an amazing revelation to me a couple years ago.  And this method it a surprise to many of the people I talk to in real life.

So here it is!

Here’s how to make your own chicken stock for free, out of garbage!  Same goes for veggie stock, by the way, just omit the chicken carcass!

By the way, any roasted chicken will do – even a rotisserie chicken from the grocery store, though those will bring a certain amount of grease and preservatives to the party.

And all those veggies?  Keep a labeled gallon sized freezer bag in the freezer at all times.  As you trim veggies, add them to the bag.  Once the bag is full, roast a chicken for dinner, and you’re ready to make stock!

Rosemary Chicken Chowder

OK.  New favorite soup time.  Yeah, it’s that good.  This one even trumps Bacon Corn Chowder, which was previously my favorite chowder style soup.

It’s thick and creamy and robust.  The brightness of the rosemary elevates the entire soup.  With the homemade cheesy croutons and bacon on top, Hubs and I could hardly stop eating!

Angel Wings Wednesday #11

Today I’ve been thinking a lot about an unexpected side effect of losing our baby: Fear of Hospitals/Clinics/Doctors.

Actually, it's not so much even that as a fear of the unknown.  

On Monday I saw the doctor for a completely minor issue that was unrelated to Sarah’s stillbirth.

I was super anxious before I went in – I felt like my heart was racing.

Then I had to wait all afternoon for the doctor to call back with the results of some routine lab work.

It was awful.

I was paralyzed with fear. I had no appetite.  I was nauseous.  I couldn’t focus or barely even function while I waited for that phone call.

I know it stems from that routine prenatal visit in December when my whole world flipped upside down and we realized that my daughter had left the world while I carried her in my belly.  Crushing.

I feel like I can’t trust “routine” checkups to be routine anymore.  I know that I am seeing the doctor for something fairly innocuous, but there’s a voice in the back of my head whispering… “but what if something really bad is wrong?”

I hate that I’ve developed this fear.  I hate that no amount of telling myself things will be fine can calm down my anxiety.

I’m glad that I don’t get sick very often, so this shouldn’t happen much.

I can only hope and pray that in time, I can conquer this fear.

BBQ Chicken Salad: SRC

This month, I was assigned Deb’s blog, Cooking on the Front Burners.  Deb loves experimenting in the kitchen and trying mew recipes!

I’ve actually been following Deb’s blog for quite some time, and still I managed to miss this amazing salad recipe!

I decided to choose a salad because I have some major spring fever (Hi spring, remember us? Still waiting…)  Though spring must have arrived somewhere, because a bunch of lovely fresh vegetables are starting to show up in the grocery stores again!  Hooray!

Portobello Baked Eggs are one of those prefect brunch or brinner dishes.

They’re easy to serve up to a crowd and really they’re quite pretty.  From the garlicky spinach to the gooey cheese to the runny egg, these are bursting with flavor in every bite.
