Khobz El Koucha (Algerian Bread)


Eat the World is headed to the North African country of Algeria this month.


As always, I was digging around looking for recipes and had a list, when suddenly I found a recipe for the most gorgeous looking bread.  And I absolutely love making bread, so it was a no brainer!


This is a fairly basic fortified bread with the main difference being the addition of sesame seeds and the unique shape.


This is definitely a bread you want to make as a tasty centerpiece!

Recipe note:

This recipe is halved from the original, which is why it calls for a divided egg.


Khobz El Koucha (Algerian Bread)

Adapted slightly from Petite Paniere


7 ounces (100 ml) warm milk, about 110 degrees F

1 ⅛ teaspoon instant yeast

½ teaspoon sugar

2 tablespoons (35 ml) vegetable oil

1 egg, lightly beaten & divided

Pinch of salt

1 ½ - 2 cups (250g) flour

1 tablespoon sesame seeds, divided

Pinch of poppy seeds, optional


Place the milk, yeast, and sugar in the bowl of a stand mixer and lightly stir to combine.  Set aside until foamy.  


Add the oil, 2 tablespoons of the beaten egg, salt, 1 ½ cups of flour, and 1 teaspoon of the sesame seeds.  Mix with the dough hook until combined into a stiff dough ball, slowly adding the remaining flour if needed.  Knead for 3 minutes. 


Turn the dough out and form into a ball.  Place the dough into a greased bowl.  Loosely cover and set aside in a warm, draft free area for 1 hour or until doubled in size.


Punch down dough.  Turn dough out onto a work surface roll into a disk that is approximately 8-inches in diameter and 1-inch thick.


Place the disk onto a parchment lined baking sheet.  Use a small biscuit cutter to lightly indent a circle into the center of the disk.  Using the circle as a guide, cut 8 equal petals, taking care to leave the center intact.  Pinch the ends of each petal together and tuck slightly under.  Loosely cover and allow to rise for 30 minutes.


Preheat oven to 350 degrees F.  Brush the remaining beaten egg over the dough as an egg wash and sprinkle with the remaining sesame seeds.


Bake in the preheated oven for 28-32 minutes or until deeply browned.
