Mauritian Beet & Potato Salad


It’s time for Eat the World - we’re heading to what looks to be a popular travel destination: Mauritius!


Mauritius is an island off the coast of Madagascar known for its beautiful beaches - as the weather is starting to turn cool with fall, I know I’ll be longing for beaches soon!


As expected of an island, much of the cuisine is seafood, but not all as meat of various kinds does show up in recipes as well as a variety of produce (though not all of the produce is available in the US).



Ultimately, I decided to make a delicious beet and potato salad, using produce I was able to find at my local farmer’s market.  Though the pictures really don’t do it justice, the salad is a flavorful side dish that’s hearty enough to be a light lunch.  The bright earthy flavor gives a nice little island vibe!



Mauritian Beet & Potato Salad

Adapted slightly from Mauritian Street Food


3 medium beets, peeled and sliced

2 tablespoon onion, diced

¾ pound little yellow potatoes, cut in halves

2 large carrots, peeled and cut in chunks

2 eggs, hard boiled

1 tablespoon lemon juice

1 tablespoon vinegar (I used chive blossom, but white vinegar is fine too)

2 tablespoon olive oil, divided

Salt & pepper, to taste


Preheat oven to 400 degrees F.


Place the beets and onion slices on a sheet of foil.  Drizzle with olive oil and fold foil to make a packet.  Repeat, making separate packets for the potatoes and carrots.


Place the beets and potatoes in the oven and bake for 20 minutes.  Add the carrot packet and cook for another 15 minutes.  Check that all the vegetables are soft.


Remove from oven and place in a bowl.


Whisk together the lemon juice, vinegar, and 1 tablespoon olive oil.  Pour over the vegetables and stir to mix.  Top with boiled eggs and season with salt & pepper.
