Pečena Piletine Sa Rižom (Baked Chicken & Rice)


This month, Eat the World is headed to Montenegro, a country in the Balkans.  From what I saw in my research, many of the recipes are simple and comforting, much like this chicken and rice.


The original recipe calls for bone-in chicken, but I prefer boneless for one-dish recipes like this.  I did use boneless thighs, since I think they stand up to one dish meals better than boneless chicken breasts, which have a tendency to dry out.

Pečena Piletine Sa Rižom  (Baked Chicken & Rice) 

Adapted from Mamin Rucak

6 boneless, skinless chicken thighs, about 1 ¾ pounds

2 tablespoon olive oil, divided

Salt & pepper

1 onion, diced

1 carrot, peeled, and diced

½ bell pepper, diced

2 cloves garlic, minced

1 ½ cups basmati rice

4 cups chicken broth

Parsley, for garnish



Preheat the oven to 375 degrees F. 


Heat 1 tablespoon of the olive oil in a dutch oven over medium-high heat.  Add the chicken thighs (seasoned with salt and pepper) and brown on both sides.  Move chicken to a plate.


Add the remaining oil.  Stir in the onion, carrots, bell peppers, and garlic.  Cook for 3 minutes or until just beginning to soften.


Stir in the rice and cook for another minute.  Add the chicken broth (season with additional salt and pepper, if desired) and bring to a low simmer.  Place the chicken back into the pot.  Cover and place in the oven.  Bake for 20-25 minutes or until rice is tender, broth is absorbed, and chicken is cooked through.


Garnish with parsley and serve.
