St. Lucia Cacao Tea


This month’s Eat the World is taking us to a tropical location; St Lucia, a Caribbean island and popular tourist destination.  


Of course, island fare is always heavy on seafood and local fruits/vegetables that are not easily sourced in the winter in the US, but I’m not one to be discouraged easily.


Early on in my search, I found references to “cocoa tea”.  Color me interested.  The recipe uses a grated cocoa stick and spices to make a tea.  



I had no idea what a cocoa stick was but the internet says that they are typically made from sun dried fermented cacao beans.  With this definition in mind, I deduced that the closest local equivalent would be cacao nibs.


This was an interesting recipe to make.  It starts off very much like tea as the water is infused with the spices and cacao nib flavors, since cacao nibs don’t melt.


Things get interesting in the second step when cornstarch and milk are added to the strained tea, suddenly the color of the tea more resembles that of hot cocoa and the cornstarch even mimics the mouthfeel of a thick cocoa!


In the end, cacao tea is a fascinating drink that is almost hot cocoa but definitely not and worth giving a try!

Cacao Tea

Adapted from Another Rum Punch


¾ cup water

2 tablespoons cacao nibs

⅛ teaspoon ground cinnamon

⅛ teaspoon ground cloves

⅛ teaspoon ground nutmeg

1 bay leaf

1-2 teaspoons honey

2 tablespoons water + 1 teaspoon cornstarch

¼ cup almond milk (or milk of choice)


Place the water, cacao nibs, cinnamon, cloves, nutmeg, and bay leaf into a small saucepan over medium heat.  Bring to a low boil, then reduce to a simmer.  Simmer for 15 minutes.


Strain the tea.  Return the liquid to the saucepan and return to a simmer.  Stir in the water/cornstarch slurry, honey, and almond milk.  Cook until thickened and serve hot.
