This month’s Eat the World is headed to Korea!


I’ve made Korean food before.  In fact, I very recently made Egg Bread (so delicious!)  Instead of just googling this time, I decided to see if my library had a Korean cookbook, and indeed they did!  I chose this one because the description boasted an eclectic collection of recipes originating from Korea, Korean towns in the US, and fusion cuisine.  So I checked it out and then I read the book…

I didn't end up trying anything from this cookbook. The format and font choices made the book very hard to follow. Additionally, the vignettes on different chefs were scattered chaotically throughout again, making the book difficult to follow.

For example, on p. 247: Dwaeji Bulgogi on a Roll, I was hoping to find out more about the recipe in the large paragraph under the title. Instead, the author writes about his research process and mentions a bunch of other recipe titles, name drops a few celebrities, then finally gets around to naming the Bulgogi only to talk about COVID for a bit, name the ingredients (I can see that in this ingredient list) and quote the chef who made it "A perfect sandwich, if you ask me," says Eric. Not helpful at all.

Yeah…


It was not great. The format was so distracting that the recipes were practically nonsensical.  I ended up finding a recipe I was vaguely interested in, then I googled anyway and found a recipe I trusted a bit more than the one I had found in the cookbook.  And it was very delicious!  The only thing I was missing was some kimchi to really make this an authentic recipe!


Dwaeji Bulgogi (Korean-Style Pork BBQ)

Adapted from Damn Delicious


1 ½ - 2 pounds pork loin, sliced thin

½ pear or apple, grated

⅓ cup low sodium soy sauce

2 tablespoons brown sugar

2 tablespoons toasted sesame oil

4 cloves garlic, minced

1 tablespoon grated fresh ginger

1 tablespoon gochijang

1-2 tablespoon olive oil, for cooking

1 teaspoon sesame seeds, for serving


Place the pork, grated pear/apple, soy sauce, brown sugar, sesame oil, garlic, ginger, and gochijang in a zipper bag.  Close and massage the marinade into the pork.  Refrigerate to marinate for 2 hours or overnight.


Heat olive oil in a large skillet over medium-high heat.  Cook the pork in batches until cooked through and deeply browned on all sides.  Serve with a sprinkling of sesame seeds.
