Chicken Chickpea Pitas

Don’t you love a cool refreshing sandwich on a hot summer day?

In this sandwich, the protein & veggies are marinated in a bright punch of flavor that just scream summer!

And if you prefer a vegetarian sandwich, you can easily swap out the chicken for more chickpeas or tofu!

Pesto Mozzarella Burgers

As summer (finally) begins to take hold, my little garden is just starting to grow.

I know, the end of July and I *hope* to pick my first tomato this week!  It might be a small harvest this year (hoping for a long fall!)

Anyhow, now that the weather is hot, my basil is growing by leaps and bounds.   I was just about to harvest a bunch to make pesto when I cleaned out my freezer and found a few frozen pesto cubes from last year’s harvest!

I needed to use that up before making new and I knew I absolutely wanted to make a pesto burger!

I paired the burger with a Tomato Basil Hamburger Bun and it was to DIE for!

Some may choose to mix the cheese and pesto and stuff the burger, but I’m not completely sold on stuffed burgers.  That and I’m lazy, so I just mixed the cheese and pesto throughout.  These will definitely be making another appearance on the grill this summer…just as soon as I harvest that basil!

Tomato Basil Hamburger Buns

Baking is one of my favorite summer activities.

I know, baking & summer don’t seem to mix.  But the way I figure it is, the AC is on anyway, I might as well use it to my advantage!

The reason I think baking and summer go so well together is that summer is also grilling season and there is nothing better than complementing a great grilled burger with a fantastic bun!

In this recipe, I combined the classic combination of tomato and basil!  The basil is the star here, with just a hint of tomato, so if you’d like the tomato to be the star, I suggest adding a few more tablespoons of tomato paste!

Ps – these are also great with soup

Beef Potato Quinoa Soup: SRC

Secret Recipe Club

Hey everyone!  It’s SRC Reveal Day again!  This month I was pleased to be assigned Erin’s blog, Wholesome RD.

As you can tell by the title, Erin is a Register Dietitian.  She’s also a Mama who loves cooking and running.

I love that Erin cooks healthy recipes, but also loves cookies!  A girl after my own heart!

Since it is a blazing hot July, you’d think that I would grill something for this reveal, but we were surprised by a cool rainy day last week and I had some stew meat in the freezer, so I got to whip up some comfort food instead!

This is a nice, hearty soup (gotta love the superfood, quinoa, making an appearance.  The soup was fantastic!  Though, if I were to make it again, I think I’d add in some corn and maybe some chipotle pepper – some spicy and sweet would round out the soup beautifully!  I definitely think this will be making another appearance once the weather turns cool!

Chipotle Steak Burritos

I love me some steak tacos,but I typically only make them in the summer, because I live in the tundra and my grill spends more time buried under the snow than not (though thinking about it, I could totally cook the steak in a skillet instead of grilling.  The thought just never occurred to me.  Duh.  But I digress…)
