As summer (finally) begins to
take hold, my little garden is just starting to grow.
I know, the end of July and I *hope* to pick my first tomato this week! It might be a small harvest this year (hoping for a long fall!)
Anyhow, now that the weather
is hot, my basil is growing by leaps and bounds. I was just about to harvest a bunch to make
pesto when I cleaned out my freezer and found a few frozen pesto cubes from
last year’s harvest!
I needed to use that up
before making new and I knew I absolutely wanted to make a pesto burger!
I paired the burger with a
Tomato Basil Hamburger Bun and it was to DIE for!
Some may choose to mix the
cheese and pesto and stuff the burger, but I’m not completely sold on stuffed
burgers. That and I’m lazy, so I just
mixed the cheese and pesto throughout.
These will definitely be making another appearance on the grill this
summer…just as soon as I harvest that basil!
Pesto Mozzarella Burgers
Adapted from Taste of Home
1 ½ lbs ground beef
1 egg
1/3 cup bread crumbs
½ cup pesto
½ cup pesto
1 cup shredded mozzarella
cheese
Salt & pepper
2 tbsp onion, minced
In a large bowl, mix together
all of the ingredients (except buns) until thoroughly combined (I wear
disposable gloves and mix with my hands).
Split the burger mixture into 6 equal sized patties.
Preheat the grill to medium
heat and grill the burgers until completely cooked through. Serve on a roasted bun with desired toppings.
Makes 6 burgers
