Spaghetti Squash with Mushrooms & Parmesan

Today I’m whipping up a delicious vegetarian side dish!  It is so light and delicious!  The spaghetti squash is first roasted, then tossed with some butter, herbs, and sautéed mushrooms.

I served mine with some Crunchy Onion Chicken Fingers.

Then I ate the leftovers for lunch the next day with a fried egg on top!  I love the versatility!

Baked Corn Dogs

Happy Memorial Day!

Today marks the beginning of summer as we remember our fallen heroes.

Yesterday my boys asked to visit their sister’s grave at the cemetery.  They picked dandelions for her and said a prayer for all of the babies.  And we also got to walk among the flags marking the graves of veterans and fallen soldiers.

After remembering yesterday, we’re welcoming summer today with the ultimate summertime kid food: corn dogs!

I love love love this recipe!  Not only are these corn dogs baked instead of fried, they’re also made with a batter of cornmeal and whole wheat flour!  Healthier kid options for the win (I’m on a mission to remake some of my kids’ favorites at home with healthier ingredients – so far chicken nuggets and now corn dogs have been a huge success!)

Quinoa Oat Pumpkin Muffins

Who’s counting down the days until summer??

We have just over a week left of school and I am ecstatic!  I love having the whole summer to chill and hang out with my boys!

Though our summers are fairly relaxed, we do participate in a few sports, so I love having filling, portable snacks on hand.

These muffins are very similar to Dude’s favorite, Protein Power Muffins (something he often takes for cold lunch along with a fruit and veggie), only these boast the additional fiber and protein from quinoa!

Mini Chicken Meatballs Vegetable Soup

You GUYS!!!

I got my kids to eat vegetable soup!!!!

Hubs was out of town and it was cold and yucky outside...rather like today because it is May and it’s snowing outside! 

Anyhow, somehow I got it in my head that I needed to make soup, even though the boys are pretty hit or miss when it comes to soup.

So I decided to make something as close to chicken noodle soup as I could get, but with lots of veggie goodness.

I took the boys to the grocery store with me on the way home from school, and they helped with the vegetable selection process, which I think really helped.  That and meatballs.  Meatballs are always a big hit in our house.

This also makes a GIANT pot of soup, so there were plenty of leftovers…hubs even got in on some of the soup when he got home! 

As with most soups, the flavors continue to develop overnight and it’s even more cohesive and flavorful the next day, though not quite as visually appealing, as the bright green vegetables lose quite a bit of their vibrancy as it sits.

Candy Bar Cupcakes #FoodNFlix

It’s time for this month’s scrumptious Food ‘n Flix recipeFood ‘n Flix is a club wherein participants watch the selected movie and then whip up something delicious inspired by that movie (and anyone can join in the fun!).  This month’s flick is The Goonies and is hosted by Heather at Girlichef.


Believe it or not, I think this is the first time I’ve watched the Goonies the whole way through, though I’ve seen bits and pieces here and there.  Honestly, I think you have to have grown up loving the Goonies to truly appreciate it as an adult.

For the first half, I found myself rolling my eyes at the nonsensical plot.  It felt like a corny 80’s movie…but not in a good way (don’t get me wrong, I love a good 80’s movie: Star Wars, Back to the Future, Ghost Busters – I’m all for the nerdy movies!)

After the halfway point, I decided that maybe I needed an attitude asjustment and started watching with 10 year old state of mind (a glass of wine helped), then I began to understand how the slapstick, potty humor, and corny jokes could certainly appeal to a certain audience.  Actually, if not for the bad language, I would consider letting my kids watch it (boo to little kid potty mouths – seriously – what the heck?!?)

Anyhow, when it comes to foodie inspiration, this one is all about the kid food!  We’re talking chips, shakes, ice cream, pizza, and candy!  I nearly made pizza (and actually tomorrow night is pizza night at my house), but I recently shared my new go-to pizza, so I wasn’t very inspired to make something new.

So I took a little inspiration from the scene where Chunk and Sloth (my gracious – the names!) bond over a Baby Ruth candy bar.

Snickerdoodle Waffles #SRC

Welcome to this month Secret Recipe Club Reveal!  If you’re new here, in SRC participants are secretly assigned another blog, peruse the archives and cook up something fabulous to be shared on reveal day.

Today’s SRC Club is special, since I’m also combining it with Kids in the Kitchen (that’s when we have a guest post by Dude, my 7 year old).

Today I was assigned Becca’s blog, It’s Yummi.  Becca is a trained chef and avid Green Bay Packer Fan (Go, Pack, Go!!)  She loves serving nutritious meals, with the occasional indulgence.

I’ve featured Becca on the blog before.  If you recall, I made her Sparkly Spiral Cookies for the Blogger Cookie Swap in December (see her version here, using colored sprinkles instead of colored dough).

As I was looking through her recipes, Dude peeked over my shoulder and saw the picture of Snickerdoodle Waffles.  Now, Dude had just recently shared his recipe for Whole Wheat Buttermilk Waffles, and he’d just been talking about developing a recipe for cinnamon waffles.  So the Snickerdoodle Waffle recipe was rather serendipitous.

Spaghetti & Meatballs

It’s Kids in the Kitchen again today!

Hubs is out of town and sweet little Dude (my 7 year old) wanted to help me out and make dinner.

Dude has his favorites (chicken noodle soup, chocolate chip M&M cookies, & spaghetti with meat sauce) that he likes to make over and over again.  But he also likes blogging, so he’s begun experimenting with his favorites (so he can keep blogging!)

Today, he made one of his favorites…with a twist!  He made spaghetti and meatballs (which I’ve only attempted once before).

Super Pretzels

And I baked pretzels, because my kids are adorable.

It all started with Spud, my 4 year old.

I was cleaning this kitchen and he was watching one of his favorite shows on TV.  Suddenly, during a commercial break, I heard, “Mama, can we make super pwenzels?”

Portobello Burgers

It’s meatless Monday!

Today I decided to shake up the classic summertime burger with a vegetarian option.

I love Portobello caps, stuffed (and here and here) or as burgers, but I often find myself hungry soon after eating if the Portobello is the main entrée.  Which is why my favorite portbello burger topping is an egg – it adds in some staying power plus the extra protein.  And the gooey yolk…heavenly!
