I loooove nachos.
Irish nachos can be a fun change of pace from the tortilla chip variety. In this version, you use grilled potatoes or homemade potato chips (depending on your preference). Note that the homemade potato chip recipe is for sweet potato chips (which would be crazy good), but the same recipe applies for regular potatoes.
You can top them with pretty much anything you’d like. I’ve included links to all of my favorite taco toppings! Yum!
Shredded Cheddar Cheese
Layer the potatoes on a plate. Top with cheese. Microwave or broil for a minute to melt the cheese. Top with remaining toppings (using chickpeas for a vegan or vegetarian option).
