Creamy Pumpkin Fiesta Chicken Soup #pumpkinweek

Today I decided to go the savory route.

Have you ever noticed that, even when pumpkin is being used as a savory ingredient (especially in soup) that cinnamon and sugar still end up being involved?

I can’t handle stuff like that – it is just too much for my palate to comprehend!


So in this recipe, the pumpkin is treated more like a winter squash and paired with all sorts of great veggies!  With chicken added as the protein, this soup makes a fabulous main dish – I highly recommend serving this with a side of tortilla chips!

Creamy Pumpkin Fiesta Chicken Soup

1 tablespoon extra-virgin olive oil
1 onion, diced
1 green bell pepper, diced
1 poblano pepper, seeded & diced
1 jalapeƱo pepper, diced
3 large beefsteak tomatoes, diced
2 cloves garlic, minced
1 cup pumpkin puree
2 cups chicken broth
1 teaspoon dried oregano
1 teaspoon chili powder
½ teaspoon salt, or to taste
¼ teaspoon black pepper
1 pound boneless skinless chicken breasts
3 ounces cream cheese

Heat the oil in a soup pot over medium heat.  Add the onion and peppers and cook until tender, about 5 minutes. 

Add the tomatoes and garlic and cook until fragrant.

Stir in the pumpkin puree, chicken broth, spices, and uncooked chicken.  Bring to a boil, then reduce heat and simmer for 15 minutes or until chicken is cooked through.

Remove chicken and set aside.

Remove the pot from heat.  Add the cream cheese and blend with an immersion blender until the soup is smooth.

Shred the chicken and return to the pot.  Serve with a side of tortilla chips.
