Pecan & Honey Granola #SecretRecipeClub





I’m jumping in for an extra Secret Recipe Club Reveal today!  In SRC, participants are secretly assigned another blog, cook something delicious and reveal it!  Today I’m helping out with Group C and was assigned Helen’s blog, Casa Costello.

Helen is from the UK and is mom to 3 little girls!  She loves to travel and make delicious food!  And we’re lucky, because she blogs about all the deliciousness!

I was assigned Helen’s blog once before when we had a special Christmas reveal.  That time I made her super cute Christmas Tree Cupcakes.  Though, that was really more of a decorating idea than a recipe, so I was super excited to get a chance to dive in again!

At first glance, I wanted to make her yummy Caramelized Onion Dip and pair it with her homemade Thyme Mini Crackers.  But this week got the better of me, and I ran out of time for cracker making (sadness).

So I decided to make a bucket list recipe instead: Walnut& Honey Granola!

I love mixing apples & yogurt topped with granola for a post-workout snack, so I am constantly buying granola & it can get expensive!  Why it’s taken me so long to make my own, I haven’t the foggiest, because it is totally easy & delicious!


I made a few minor changes to Helen’s recipe.  I used pecans in place of the walnuts because that’s what I had on hand (I love walnuts though, so next time I’m making it that way).  I also added some old fashioned oats (rolled oats) for a bit of texture and omitted the dried cranberries (I’m not huge on dried fruits).

I am totally in love with homemade granola!  It full of different crunchy textures with the crunchy steel cut oats and the softer crunch of the nuts with just the right touch of sweetness.

It is flavorful enough to munch of straight from the bowl and amazing when mixed with fruit & yogurt!

I am officially converted to making my own granola!  Thank you, Helen, for the perfect recipe!


Pecan & Honey Granola
Adapted from Casa Costello

100 g steel cut oats (about ¾ cup)
50 g old fashioned oats (about ½ cup)
120 g pecans, roughly chopped (about 1 cup)
2 tbsp brown sugar
1 tsp ground cinnamon
3 tbsp honey
1 tbsp vanilla extract
60 g dried cranberries or other dried fruit (optional)


Preheat the oven to 350 degrees F and line a baking tray with parchment or silicone mat.

Place the steel cut oats, old fashioned old oats, pecans, and brown sugar in a large bowl.  Mix until thoroughly combined.

In a small measuring cup, mix together the honey and vanilla (if the honey is thick, microwave it for 10-15 seconds until runny).  Drizzle the honey mixture over the oat mixture and stir until combined.

Pour the granola onto the tray and spread out.

Bake the granola for 20 minutes, stirring the mixture every 5 minutes to encourage even baking.

After 20 minutes, turn the oven off, leaving the granola in the oven to cool for 30 minutes.

Once cooled, mix in dried fruit, if desired.  Store in a sealed container at room temperature for up to 2 weeks.

  3. I am always eating yogurt and granola too. I, on the other hand, don't like making homemade granola too much because everyone else will demolish it and I won't have any left LOL. If I buy storebought - they leave it alone. Such a toss up because homemade is sooooo much better and cheaper ;) I guess I'll have to find a place to stash my homemade granola so I can make this - it looks so yummy. Thank you for jumping in and covering for Group C. HAPPY REVEAL DAY!
