Bacon & Caramelized Onion BBQ Smothered Chicken


I know, lengthy title, right?

I just couldn’t think of a more concise way to describe this yummy chicken recipe!

It all came about when Hubs got home from a 10 day work trip.

It was long.  And Dude and Spud have a tendency to complain about everything I cook when Hubs is out of town.  So I pretty much let the kids live on mac & cheese and sandwiches while I spend the week scrounging around eating whatever.

Needless to say, I was a pretty happy lady when Hubs got home.  Plus he was pretty psyched for a home cooked meal after eating out for a week and a half!


Bacon & Caramelized Onion BBQ Smothered Chicken
An Amy’s Cooking Adventures Original Recipe

4 slices bacon
1 large onion, thinly sliced
4 boneless skinless chicken breasts
4 thick sliced swiss cheese
BBQ Sauce, for serving


Fry the bacon to crisp in a large skillet oven medium heat.  Remove the bacon and set aside to drain, reserving the bacon drippings in the pan.

Add the onion slices to the bacon drippings and stir to coat.  Turn heat to medium-low and cook, stirring occasionally until caramelized to a deep amber color, about 15 minutes.  Remove the onions, and set aside.

Season the chicken breasts with BBQ seasoning.  Add to the same skillet.  Turn to medium heat and cook until done, flipping once to brown both sides.

In the last minute of cooking, add the swiss slices, and cook until melted.  Top the chicken with the crisp bacon and caramelized onions and serve.

  1. This sounds so yummy! It reminds me a little of one of my favorite dishes that I order at our local Cuban restaurant with cheese, ham and sauteed onions on it. They use a Mojo marinade instead of the BBQ sauce but I bet this one is just as good. Thanks for sharing on Create Link Inspire.
