BLT Salad



Who likes BLTs?

A sandwich comprised of mostly bacon?  Heck yeah.

But I don’t make BLTs often because, of course, there are not the healthiest of sandwiches.  So this time, I decided to shake things up a bit and make an indulgent BLT salad.

I love the BLT salad because it has all of the yummy BLT flavors, but a lot more L, so it’s a whole lot healthier than that delicious sandwich!

To take this salad to the next level, I also decided to make some bacon croutons!  Indulgent?  Yes!  Healthy?  Yes!  This is the BLT for me!




Recipe Notes:
*For the croutons, I used a slice of old homemade bread that I had in the freezer for making bread crumbs.  If you bread is fresh, consider cubing it and then microwaving for 30-60 seconds to dry it out slightly.

BLT Salad

Salad
1-2 slices bacon, fried, drippings reserved
2 cup spinach or lettuce of choice, loosely packed
6-8 cherry tomatoes, quartered
Bacon Croutons

Bacon Croutons
1 tbsp bacon drippings
1 slice whole wheat bread, cubed (see notes)
1/8 tsp garlic powder
1/8 tsp dried oregano


Place the lettuce into a bowl.  Top with the bacon and tomatoes.

To make the croutons, heat the bacon drippings in a skillet over medium heat.  Add the bread cubes and toss to coat.  Sprinkle in the garlic and oregano, again tossing to coat.

Cook until the bread is toasted on one side.  Flip the cubes and toast on the other side.

Place the croutons on top of the salad and serve.
