Today’s recipe is a great twist on the classic St. Patrick’s Day Corned Beef. This can actually use up the leftovers and make it into something fabulous and a great way to stretch those delicious leftovers a little further.
This recipe mixes mashed potatoes and corned beef and some spices to make patties. These patties can be served as is - on a piece of toast, or topped with a fried egg- delicious!
These were inspired by this month's Movie and Munchies pick: Wild Mountain Thyme.
Corned Beef Patties
1 cup corned beef
1 cup leftover mashed potatoes
1 egg
¼ cup flour
½ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon pepper
1 tablespoon butter, for pan
Mis together all ingredients. Form into patties. Heat the butter in a skillet over medium heat. Add the patties. Cook until browned on each side and heated through. Serve over toast or with a fried egg.
This is the first year that I can ever remember that I didn't have any leftover corned beef. I'm disappointed because these potato patties sound amazing.
