Old Fashioned Pumpkin Cookies


Is it possible to have too many recipes for pumpkin cookies?


I think not.


I made these cookies when I was looking for a soft dessert that Spud could eat after he got his braces on.



Well, we could eat these after about 4 days…braces are tough and he ended up learning how to make instant Jell-o and instant pudding in the meantime!


Regardless, we all enjoyed these pillowy soft cookies!



Old Fashioned Pumpkin Cookies

Adapted from Libby’s Pumpkin


½ cup butter, softened

1 ½ cup white sugar

1 cup pumpkin puree

1 egg

1 teaspoon vanilla

2 ½ cups all purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt

½ cup chocolate, melted


Preheat oven to 350 degrees F and line baking sheets with parchment or silicone mats.


Place the sugar and butter in a stand mixer fitted with the paddle attachment and beat until light and fluffy.  Add the pumpkin, egg, and vanilla, and mix until combined.


Add the flour, baking powder and soda, salt, and spices and mix until combined.


Scoop 2 tablespoons of dough onto the prepared sheets.  Bake for 15-18 minutes or until the cookies are set and just beginning to brown.


Cool on baking sheets. Drizzle with melted chocolate and serve.


To store, allow the chocolate to set, then place cookies in a lidded container, layers divided with sheets of waxed paper to prevent sticking.
