Cucumber Sandwich


Today’s recipe is a tasty little tea sandwich or light lunch.


For Movies and Munchies this month, we were invited to watch Queen Bees, which takes place in a retirement community.  I was skeptical at first, but the movie turned out to be funny and delightful as the characters find that the retirement community is full of cliques, drama, and even romance! 





In an early scene, cucumber sandwiches are seen, and since it’s Lent, I decided to make myself a cucumber sandwich for a light lunch (along with the Asparagus Soup!)


Both tasty and simple, this one is sure to please!



Cucumber Sandwich


2 thin slices whole wheat bread

1 small cucumber, thinly sliced

2 tablespoons ranch (or cream cheese or butter)

1 tablespoon crumbled feta

Pinch of dill


Spread the ranch over both slices of bread.  Top with cucumber slices. Sprinkle with feta and dill.  Serve immediately.
