Cinnamon Applesauce Muffins

 

School is right around the corner, which means it’s time to fill those lunchboxes with healthy options!


I love these muffins for so many reasons.  First, they’re hearty, filling, and have fruit (applesauce) in them.  I like them even better for their versatility. 


These muffins make a great breakfast, lunch, or snack.  As a lunch or breakfast, I would pair them with fruits or veggies for a more complete meal.  Either way, these muffins are tasty and will keep kids powered through the school day!

Cinnamon Applesauce Muffins


1 ⅓ cups unsweetened applesauce

¼ cup sour cream

1 teaspoon vanilla

2 eggs

⅓ cup brown sugar

⅓ cup butter, melted

1 cup old fashioned oats

1 ½ cup flour

¾ teaspoon baking soda

1 teaspoon baking powder

1 ¼ teaspoons ground cinnamon

½ teaspoon salt

1 tablespoons + ¾ teaspoon cinnamon for topping


Preheat the oven to 375 degrees F and line muffin tins with paper liners.


Whisk together the applesauce, sour cream, vanilla extract, eggs, brown sugar, adn butter until well blended.


In a separate bowl, whisk together the oats, flour, baking powder, baking soda, salt, and cinnamon.


Add the wet ingredients to the dry and stir to combine.  Add about ¼ cup of batter to each prepared muffin cup.  Sprinkle the top of each muffin with cinnamon sugar, then bake in the preheated oven for 16-18 minutes.  Cool for 5 minutes, then remove from pans.  Can be served immediately or after cooling.


Makes 12-16 muffins

  1. I always liked having muffins on hand when school was in session. They are a quick, eat as you go food that is somewhat healthy. This muffins sounds scrumptious.

  3. Oh my, love anything with apple and cinnamon. I usually don't like eating apples on their own but give them to me in a dessert and I'm the happiest. Will be trying out this recipe soon.
