It’s Pi Day! I always
like to celebrate with pie on pi day, usually pie in the savory form and this
year is no different.
Since it is (yet another) blizzard outside, I took quite a
few liberties with the Shepard’s pie, using what I had on hand.
What I had on hand meant sausage for the meat and tater tots
for the topping!
I’m so glad I had these particular ingredients on hand,
because it made for an amazing dish and it was a total crowd pleaser! Happy Pi Day!
Tater Tot Shepherd’s Pie
1 pound country sausage
1 carrots, peeled and diced
1 small onion, diced
1 green bell pepper, diced
1 cup fresh spinach
1 tablespoon Worcestershire sauce
½ teaspoon smoked paprika
Leaves from 2 spring fresh thyme
2 tablespoons flour
Salt & pepper
2 cups frozen potato crowns
Preheat the oven to 425 degrees F.
Place the sausage, onions, carrots, and bell pepper in a
large skillet over medium heat. Cook
until the sausage is browned and vegetables are soft.
Stir in the spinach, Worcestershire, paprika, thyme, salt and
pepper. Cook until the spinach is
wilted.
Sprinkle the flour over the mixture and cook for 1-2 minutes.
Pour the mixture into a pie plate and top with potato crowns.
Bake in the preheated oven for 20-25 minutes or until
potatoes are crisp.
