Applewood Smoked Pork, Apple & Walnut Salad #cookoutweek

Since Hubs in the grill master in our house, I handed him some pork chops and the Smokin’-O’s and let him have his fun!  He watch the handy instructional video and was able to get the Smokin’-O’s going on his first try.  He had a blast turning his outdoor grill into a smoker and I’m just beginning to think of the amazing smoky things we can make next!

We simply enjoyed the smoked pork chops the first day, then we made these delicious salads with the leftovers!  Yum!





Applewood Smoked Pork, Apple & Walnut Salad

Pork Chops
4 boneless pork chops, about 1 ½ lbs
Salt & pepper
1 Smokin’-Os Applewood Smoke Ring

Salad
1 head romaine lettuce, shredded
1 fuji apple, diced
1 avocado, diced
¼ cup chopped walnuts

Vinaigrette
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tsp low sodium soy sauce
1 tsp honey
1 tbsp minced onion
1 clove garlic, minced
½ tsp stone ground mustard


Preheat the grill.  Season the pork chops liberally with salt & pepper.  Light the Smokin’-O according to package instructions.  Cook the pork to an internal temperature of 145 degrees F.

While the pork cooks, arrange the salad ingredients on plates and whisk together the vinaigrette ingredients.

Allow the cooked pork to rest for 5 minutes before slicing.  Add sliced pork and vinaigrette to the salads and serve.

*Alternatively, cook extra pork chops and use leftovers for salads the next day.

Ingredients
  • 4 Pork Chops
  • 8 cups romaine lettuce
  • 1 fuji apple
