Loaded Skillet Potatoes


If you’re following me on Instagram, you might have seen this picture from when I dug up my potato plants.



That’s 10 pounds of potatoes!  We’re a meat & potatoes kind of family, so that is absolutely fantastic! 

Dude & Spud love crispy skillet potatoes (I’ve convinced them that they’re just like French fries) and I love me some baked potatoes, so I came up with a sort of hybrid dish that everyone could enjoy (plus I didn’t have to turn on the oven when it was 95 degrees!)


It’s the sort of recipe that’s completely customizable.  I chose BBQ for this version. But it was also be amazing with a Mexican flair or maybe some chili for a slightly healthier version of chili tots – woah!  I think I’ve just figured out what I’m making for dinner tonight!


Loaded Skillet Potatoes

Cooked pulled chicken or pork (crockpot recipes here and here)
¼ cup BBQ sauce
1 crown broccoli, steamed
Shredded cheddar cheese
Sour cream or plain Greek yogurt


Cook the skilletpotatoes, according to recipe instructions.

Top with the remaining ingredients and serve!
