Crockpot Spicy Dr. Pepper Pulled Pork

I love using the crockpot this time of year!  It’s such a great way to cook those yummy roasts without heating up the house!

Today’s recipe is a super delicious, slightly sweet, a little bit spicy pulled pork!  After cooking all day with the Dr. Pepper and spices, the pork is so flavorful and tender!

The pork is delicious on salad or sandwiches, with BBQ sauce, if you like it!

Crockpot Spicy Dr. Pepper Pulled Pork
Adapted from The Pioneer Woman

1 (3 lb) pork roast
1 medium onion, cut in chunks
3 cloves garlic, smashed
2 chipotle peppers in adobo sauce + 1 tbsp sauce
2 cans Dr. Pepper
Salt & pepper

Season the pork roast generously with salt and pepper.

Place the onion and garlic on the bottom of the slow cooker.  Place the seasoned pork roast of top.  Add the chipotle peppers, sauce, and Dr. Pepper.  Cook on low for 6-8 hours or until very tender.

Remove the pork and shred with 2 forks.

Strain out any solids and fat from the remaining sauce and discard.  Turn the slow cooker to warm and add the pork back into the sauce and serve.
