Slow Cooker Teriyaki Beef Tips

One of my goals this year is to use my crockpot more often.

I’ve found that the more I use the crockpot, the easier it gets to plan it in to my routine and get creative with recipes!

When I came across the call for bloggers to participate in the 2015 Healthy Solutions Spice BlendsChallenge, I knew I wanted to make an easy, delicious recipe in the crockpot.

I received a packet of Healthy Solutions Bold Beef Rub.  I gave it a quick taste test (ah-mazing…I can’t wait to use it on steaks!) and my first thought was teriyaki!

In this recipe, the beef tips are tossed in Bold Beef Rub and quickly seared before going in the crockpot with some beef stock and wine.  The result beef tips are extremely tender, flavorful and delicious served over rice and stir fry vegetables!

Slow Cooker Teriyaki Beef Tips

Beef Tips
1 medium onion, roughly chopped
2 cloves garlic, minced
1 tbsp toasted sesame oil or olive oil
1 lb beef sirloin, cut in strips, excess fat discarded
¾ cup rice wine or dry white wine
½ tsp freshly grated ginger
3 tbsp brown sugar
2 tbsp soy sauce
2 cups beef broth
2 tbsp corn starch + ¼ cup cold water, whisked
2 ½ cups cooked rice, for serving

Stir Fry Vegetables
1 tbsp toasted sesame or olive oil
1 red pepper, sliced
2 large carrots, cut in matchsticks
2 crowns broccoli, cut into florets
1 tbsp sesame seeds, lightly toasted

Place the onion and garlic in the bottom of a slow cooker.

Heat the oil in a large pan over medium-high heat.  Toss the beef strips in ½ tablespoon of Bold Beef Rub, coating evenly.  Place the beef in the heated pan and sear steak on each side, about 3 minutes total.  Be sure not to overcrowd the pan, work in batches as necessary.

Place the seared beef on top of the onions.  Deglaze the pan with ¼ cup of wine, also add to the crockpot.  Heat additional oil and finish cooking the beef tips as needed, deglazing with wine each time.

Once all the beef is cooked and added to the crockpot, sprinkle the grated ginger over top.  Mix together the brown sugar and remaining ½ tablespoon Bold Beef Rub and sprinkle over the beef.  Top with any remaining wine, soy sauce, and beef broth.  Cover and cook on LOW for 7 hours.

Carefully whisk in the cornstarch mixture to thicken the gravy and continue cooking for 1 more hour (alternately, turn to HIGH and cook for 30 minutes).

While the beef finishes cooking, cook the rice and vegetables.  To make the vegetables, heat the oil over medium-high heat.  Add the vegetables and cook for 5 minutes or until crisp-tender.  Sprinkle with toasted sesame seeds.

To serve, place the rice and vegetables in a shallow bowl.  Top with beef tips and gravy.

Serves 4-6
