Hot Cocoa Cookies


Dude is guest blogging again today with Kids in the Kitchen!

Yesterday, he turned 7 years old (stay tuned next week for his awesome birthday party on Amy’s Confectionery Adventures!)

He originally planned to take Double Chocolate M&M Cookies to school as a birthday treat.  But then, a few weeks ago he spied the recipe for Hot Cocoa Cookies on the back of a container of Mini Mallow Bits and immediately changed his plan to those.

He was so proud to take his cookies and share them with his teachers and classmates!  Happy 7th Birthday, Dude!

HOT COCOA COOKIES
Recipe from Swiss Miss

What You Need
1 ¼ cups butter softened
1 cup granulated sugar
2/3 cup packed brown sugar
2 eggs
1 tsp. vanilla
3 ¼ cups flour
4 envelopes hot cocoa mix
1 ¼ tsp baking soda
1 tsp baking powder
1 cup mini chocolate chips
1 cup Mini Mallow Bits, vanilla flavored

Heat the oven to 350 degrees F and line baking sheets with silicone mats.

Place the butter and sugars in the bowl of a stand mixer and beat until light and fluffy.  Add the eggs and vanilla and mix until combined.

Slowly add in the flour, cocoa mix, baking powder, and baking soda, mix until thoroughly combined.

Use a large spoon to stir in the Mallow Bits and chocolate chips.

Use a 2 tablespoon scoop to drop the dough onto the prepared sheets.

Bake for 9-11 minutes or until edges are lightly browned.  Cool on baking sheets for 5 minutes, then move to wire racks and cool completely.

Makes about 48 cookies
