Buffaloaf (Classic Meatloaf) {Food n' Flix}


Here we are for my second Cloudy with a Chance of Meatballs 2 recipes!  The sweet little Buffaloaf!  He’s so stinkin’ cute!

This month’s movie is hosted by Camilla from Culinary Adventures with Camilla.  She chose Cloudy with a Chance of Meatballs or Cloudy with a Chance of Meatballs 2.

Since I’d seen the first one shortly after it came out, I decided to watch the second one.  And I LOVED it!!!  I think the sequel was even better than the original!

In Cloudy 2, the malfunctioning food making machine has continued to make food, but after being unattended, it has created a whole new ecosystem of foodimals!  I’m not going into much further detail about the movie here, but I will say that I love it and I adore the foodimals!


So after making the SubWhales, I knew I wanted to make the Buffaloaf.  I ended up liking him even better.  I just can’t get enough of him!  Dat face!



I ended up pulling this recipe from here and there.  Partly from my mom, partly from Simply Recipes, and partly oh-my-gosh-I-have-so-much-zucchini.

The end result was amazing.  It was flavorful, moist, and delicious!  Hubs took a bite and said, “Woah.  This is not your standard unglorified meatball.”  Even Dude and Spud enjoyed Mr. Buffaloaf and if you know my kids, that’s really something!


Buffaloaf {Classic Meatloaf}

1 tbsp olive oil
1 small zucchini, shredded
1 large carrot, shredded
1 small onion, diced
2 cloves garlic, minced
½ tsp black pepper
½ tsp salt
2 tsp worchestershire sauce
2 tbsp ketchup
1 lb ground beef
1 lb pork sausage
2 eggs
½ cup bread crumbs
½ tsp fennel seeds

Topping
Parsley
Ketchup
Black peppercorns
French’s fried onions
Onion pieces


Preheat the oven to 350 degrees F.

Heat the oil in a large skillet over medium heat.  Add the zucchini, carrots, onion, and garlic.  Cook until the vegetables are tender.  Stir in the salt, pepper, worchestershire, and ketchup.  Cook until heated.  Set mixture aside to cool slightly.

In a large bowl, place the cooled vegetable mixture, beef, sausage, bread crumbs and egg.  Use your hands (rubber gloves recommended!) to mix thoroughly.  Place the mixture into a 9x5 inch pan.  Bake for 1 hour or until it reaches an internal temperature of 165 degrees F (well done).

Once fully cooked, carefully pour off the excess grease and invert onto a serving plate.  Glaze with ketchup and let set for at least 5 minutes before cutting.

If desired, make the Buffaloaf by slicing one side for the mouth.  Add French’s onions for the horns and parsley for the tuft of hair.  Peppercorns are placed for the eyes and small pieces of onion for the teeth!

Serves 6-8
