Multigrain Pancakes


It’s been awhile since I’ve shared great pancake recipe!

Can I tell you that this one is my favorite so far?  AND the kids ate them up!    Seriously!  There was only one left for my husband when he got home!

I also love that these are packed with healthy whole grains!  After all, if I’m going to serve something that drenched in syrup for dinner (because I’m waaaay too lazy to get up in the morning and actually make pancakes), they should at least be packed with whole grains!


Multigrain Pancakes
Adapted from Taste of Home

½ cup whole wheat flour
¼ cup all purpose flour
¼ cup cornmeal
2 tbsp old fashioned oats
2 tbsp ground flax
½ tsp baking soda
½ tsp salt
1 egg
2 tbsp honey
1 ¼ cup buttermilk
2 tbsp unsalted butter, melted


In a large bowl, whisk together the flours, cornmeal, oats, flax, baking soda, and salt.

In a separate bowl, whisk together the egg, honey, buttermilk, and butter.

Stir the wet ingredients into the dry ingredients and stir until just moistened.

Pour 3-4 tablespoons of batter onto a hot, greased skillet.  Cook for 1-2 minutes or until browned, flip and cook on the other side.  Serve hot with butter and your favorite syrup.
