Sausage & Potato Skillet

Don’t you love quick, easy meals?  I’m loving them even more now that my Kindergartener has soccer practice on the same night that I teach Zumba!  Talk about busy Mondays!

Sausage & Potato Skillet
Adapted from Taste of Home

1 lb Italian Sausage
2 large carrots, diced
1 small onion, diced
2 cups spinach
3 cup cooked potatoes, diced 
Salt & pepper, to taste
4 eggs, fried

In a large skillet, brown the sausage.  Once the sausage in mostly browned, add the onion and carrots. Stir in the spinach and potatoes and cook until warmed through.  Season with salt and pepper, to taste.

Serve the hash on four plates, each topped with a fried egg.
