Lemon-Thyme Iced Tea



Berry Basil Iced Tea has been my go-to drink this summer.  But after I made pesto, I thought I’d best let my basil recover a bit before making more tea.

So I peeked in the refrigerator and saw some lemons that needed to be used up and peeked out to the garden and saw the aggressively growing thyme.  I knew from last year that I loved the lemon & thyme combination, so I thought I try it as tea!  And while Berry Basil tea is still my favorite, this one is a close second!


Lemon-Thyme Iced Tea
An Amy’s Cooking Adventures Original Recipe

 1 quart (4 cups) water, boiling
Juice & zest from 1 lemon
Small handful thyme sprigs
2 tbsp honey
6 bags green tea
3 cups ice


Bring 1 quart of water to a boil in a non-reactive pot (non-stick or stainless steel).  Remove from heat and quickly stir in lemon juice & zest, thyme, honey, and green tea bags.  Steep for 5 minutes.

Place the ice cubes in a non-reactive (plastic or glass) pitcher.

Strain out the large solids by pouring the tea through a colander into a large bowl.   Then, strain out any remaining pulp by lining the colander with cheesecloth or a doubled paper towel and pouring the tea into the ice filled pitcher.  Serve in mason jars filled with ice on a hot day.

Makes about ½ gallon of tea, or 8 cups

  5. I never would have thought to combine lemon and thyme together as a tea. It sounds like a perfect refreshing drink for summer. I love that it has green tea in it too, but I don't have any at the moment. I think I'll try it with my mint green tea bags or my jasmine green tea bags. It could be an interesting spin on flavours
