More and more often, I find
myself turning to a simple vegetarian salad or sandwich for lunch. Here is this week’s obsession.
Avocado, Cucumber, & Pepper Jack Melt
An Amy’s Cooking Adventures
Original Recipe
2 slices 100% whole wheat
bread, toasted
1 oz pepper jack cheese,
sliced thin
1/3 avocado, sliced
1/3 cucumber, sliced
Spinach or lettuce
Immediately after the toast
comes out of the toaster, place the cheese on top of one slice so it has a
chance to melt (if it isn’t melty enough, stick it in the microwave for 10
seconds).
Add the avocado slices,
cucumber slices, and spinach. Top with
the other piece of toast. Enjoy.
