Have you seen the viral Boursin Tomato Pasta recipe that’s going around online? I decided to take my own twist on this new favorite by adding squash for some fall vibes and sausage for protein. And I have to say, it was easy and delicious, even with the additions.
I ended up with a larger squash for this recipe, so I roasted both halves, then added one half to the pasta and mashed the other half as a side dish. It was a win-win.

1 small acorn squash, cut in half, seeds discarded
1 pound cherry tomatoes
6 ounces spreadable cheese with garlic & herbs (like Alouette or Boursin)
3 cloves garlic, peeled
1 tablespoon olive oil
8 ounces dry pasta
1 pound mild Italian sausage
Preheat oven to 400 degrees F. Place the squash, cut side down, in a deep baking dish. On the side, add the spreadable cheese, garlic, and tomatoes. Drizzle with olive oil. Bake in the preheated oven for 30-45 minutes or until squash is fork-tender.
Once the vegetables are almost done, cook the sausage until browned in a large skillet over medium heat. In a separate pot, cook the pasta to al dente.
Once the vegetables are done, carefully scoop the flesh from the squash and discard the tough skin. Place the squash back in the pan with the tomatoes and cheese and mash everything together to make a sauce.
Scoop the pasta into the skillet with the sausage (it is ok if some water is added with the scoops, it will help make the sauce), then add the tomato, cheese, and squash sauce. Stir to mix. Serve immediately topped with fresh basil, if desired.
