Pop Art Cake

This past spring, my parents came up to see the boys’ final band concert of the year and it just so happened that they arrived on my mom’s birthday!

I knew I wanted to do something special but it was also a super chaotic week and I kinda remembered the cake at the last second.

Luckily, I had an extra layer sitting in my freezer, leftover from when I made Dude’s Ford150 cake, so I got it thawing and decided to make something fun for my mom.

I remembered that she loved the Cartoon Cake I made a couple years back, which looks a little like it came out of a Dr. Seuss book, and wanted to make something similar.

Since the cake I had on hand was a single square layer, I decided to cut it into thirds and stack it to make it look like a giant single slice.  And this time, I didn’t have fondant on hand, so I challenged myself to make this completely from buttercream.

The pop art cake slice turned out so fun and my mom absolutely loved it!  Mission accomplished!
