Recently I shared my recipe for Mexican Street Corn Salad with Chipotle Dressing. The salad was delicious, but the dressing made such a large batch, I knew I’d struggle to use it all on salads before it started to get weird.
I started thinking about the base of the dressing and knew immediately that it was destined to become chicken salad. And it was so so good! Savory and creamy, with just a slight kick from the chipotle peppers - delish!
I enjoyed the chicken salad on various types of crackers, but it is equally good on fresh baked bread or even as a salad topping.
Chipotle Chicken Salad
3 ½ cups cooked chicken, chopped or shredded
1 tablespoon diced onion
1 stalk celery, diced
¾ cup chipotle dressing (recipe here)
Salt & pepper, to taste
Mix all ingredients together. Refrigerate overnight. Stir again and serve.
