My grandma has always loved
hats. So when she turned 85 this past
summer, I just knew that I wanted to make her a hat cake!
The cake was a white almond sour cream cake with raspberry jam and chocolate fudge filling.
I baked the cake into one
9-inch round pan and two 6-inch round pans.
One the cakes were stacked (and frozen overnight) I took a sharp knife
and carved the cake into an elegant hat shape.
The cake was then covered in a
layer of buttercream and a layer of purple MM fondant. The flower details were made using a
combination of fondant and royal icing.

My grandma was so surprised
when she saw her cake and was so excited to take it home and share it will all
of her friends!
