Crackers with Salami & Pepperoni Rosettes

 

Mother’s Day is right around the corner, so it’s time to break out those pretty appetizers for mom!


Now, I have to be honest, I live too far away from my mom to spoil her on Mother’s Day, and I hate going out to overcrowded restaurants, so I usually cook for myself on Mother’s Day.  But I really don’t mind it because I truly enjoy cooking and I can make what I want.  



However, there are times I want to do other things on Mother’s Day, so pretty and simple is key, like today’s 4 ingredient recipe: crackers, spreadable cheese, pepperoni/salami, & basil (optional).


I made the appetizers with 2 types of meats.  The salami was pretty, but did need a little cutting to make the rosette sit nicely, but I also enjoyed the simple ruffled pepperoni.



Crackers with Rosettes


Crackers, such as Milton’s Multigrain crackers

Spreadable cheese, such as Bourin or Aloutte

Thinly sliced pepperoni or salami

Fresh basil, optional


Spread a generous layer of cheese over crackers.  


To make salami rosettes, fold salamini in half and roll in a spiral.  If desired, trim the bottom so the rosette isn’t too tall.  Push into the cheese.


To make pepperoni ruffles, fold 2 pepperoni in quarters, firmly press together and push into the cheese.  Garnish with a basil leaf, if desired.


Serve immediately.
