Today’s recipe works as a fun April Fool’s prank or as a great way to make your own jell-o out of juice for a slightly healthier treat!
The homemade jell-o takes only 3 ingredients: fruit juice (mine was apple), unflavored gelatin, and honey! The honey is optional, but since even unflavored gelatin has a little taste, the honey works well to sweeten the juice just enough to make it feel like a dessert.
Now that my family is all older, they’re pretty wise to my tricks by now. They were a little suspicious when the apple juice was already poured in glasses, but I still surprised a couple of them!
Homemade Apple Juice Jell-O
4 cups unsweetened apple juice, divided
2 packets unflavored gelatin (about 2 tablespoons)
2 tablespoons honey
Stir gelatin into ½ cup of room temperature apple juice to bloom. The mixture will become very thick.
Place the remaining apple juice in a medium saucepan over medium heat. Heat until steaming. Remove from heat and stir in the honey and bloomed gelatin. Stir until dissolved.
Pour into a bowl for jell-o or cups for an April Fools Day joke. Chill 4 hours or overnight, then serve.
