Chocolate Orange Muffins


I love having muffins around for a quick breakfast or snack.  This recipe highlights a classic flavor pairing: chocolate and orange!


The orange comes in the form of orange juice and zest, then I decided to go all out and make the muffin itself chocolatey with chocolate chips to boot!


I loved that the flavors were perfectly balanced but since you couldn’t see any orange, it ended up being a pleasant surprise for those who grabbed one on the run!



Chocolate Orange Muffins

1 egg

⅓ cup vegetable oil

½ cup sugar

¾ cup freshly squeezed orange juice (from 4 oranges)

1 tablespoon orange zest

¼ cup milk

2 cups flour

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

½ cup mini chocolate chips


Preheat oven to 350 and line a 12-cup muffin tin with paper liners.


Place the egg, oil, and sugar in a bowl and whisk to combine.  Add the orange juice, zest, and milk and whisk until combined.


Add the flour, baking powder, baking soda, and salt.  Stir until flour is incorporated.  Add the chocolate chips and stir until evenly mixed.


Divide the batter between the prepared muffin cups.


Bake in the preheated oven for 14-18 minutes or until a toothpick inserted into the center comes out clean


Makes 12 muffins.
