Orange Cranberry Baked Oatmeal


Happy New Year!  As per usually we’re kicking things off with healthy options like this baked oatmeal.


I still had some cranberry compote leftover from my cranberry simple syrup and decided to stir those flavors into a baked oatmeal!



A little citrusy from the orange juice with tart little cranberry gems peppered throughout makes this a festive and pretty healthy breakfast!

Orange Cranberry Baked Oatmeal


1 cup cup old fashioned oats

¾ teaspoon baking powder

Dash of salt (about 1/8 tsp)

½  cup lowfat milk

¼ cup orange juice

Zest from 1 orange

⅔ cup cranberry compote

1 large egg

2 tablespoons honey

1 tbsp unsalted butter, melted

1 teaspoon vanilla extract



Preheat the oven to 350 degrees F.  Spray an 8x8-inch square pan with nonstick spray.


In a large bowl, combine the oats, salt, and baking powder.


In a smaller bowl (or large measuring cup), whisk together the milk, orange juice, zest, cranberry compote, egg, honey, vanilla, and butter.


Pour the wet ingredients into the dry ingredients and stir until combined.  


Pour the batter evenly between the prepared pan.  Bake in the preheated oven for 28-32 minutes or until the top is browned and no longer sticky and the oats have set.
