I love making bread of any kind. In fact, it is exceptionally rare that I will buy bread (exception being refrigerated canned crescent rolls. I can make crescent rolls, but sometimes the convenience is worth it.) Anyhow, one of the favorites in my house is homemade pita breads. The homemade pitas are so soft and pillowy and amazing fresh out of the oven!
I almost exclusively serve these with Gyros, but they’re also great as wrap sandwiches!

Homemade Pitas
Recipe from The Mediterranean Dish
1 cup very warm water (about 110 degrees F)
2 teaspoons active dry yeast
½ teaspoon sugar
3 cups all purpose flour, divided
2 tablespoons extra virgin olive oil
1 teaspoon salt
Place the water, yeast, sugar, and ½ cup flour in the bowl of a stand mixer fitted with the paddle attachment. Stir to combine. Set aside for 10 minutes or until frothy.
Add the salt, olive oil, and half the remaining flour. Mix until a ball forms. Switch to the dough hook and add the remaining flour. Knead until a smooth, slightly tacky ball forms.
Place the dough in a greased bowl. Cover and set aside in a warm area for one hour or until doubled in size.
Divide the dough into 3-ounce pieces. Cover and set aside for 10 minutes to rest.
Meanwhile, preheat the oven to 475 degrees F and place a pizza stone in the oven to preheat.
Begin rolling the pita rounds to about ¼-inch thickness. Place the pitas on the hot stone - I can usually fit 2-3 pitas at a time. Bake for 2 minutes. Use tongs to flip, then cook for a minute more.
Remove from the oven and repeat with the rest of the pitas.
Pitas should puff during baking. Give the pitas a few minutes to cool before pushing the air out - be careful of hot steam.
Makes 8 or 9 pitas


I love homemade pitas too. I make them on the grill in the summertime. Love it.

ReplyDeleteI should invest in a pizza stone.. just love how the pita has puffed up in the oven. I prefer baking pita at home. The rest, being in the French part of Canada, bakery breads are so delicious.
