Nutty Breakfast Cookies



A friend of mine recently asked me if I could make her some healthy breakfast cookies.  She spends a lot of time on the road and was looking for a portable option so she doesn’t have to rely on fast food or vending machines.



I asked her favorite mix-ins and these are the hearty, tasty cookies we came up with!



Nutty Breakfast Cookies


½ cup peanut butter (sugar free, if possible)

½ cup unsweetened applesauce

⅓ cup honey

2 eggs

1 ½ cups old fashioned oats

¼ cup ground flax

¼ cup chia seeds

¼ cups blanched almonds

¼ cup raw pepitas (pumpkin seeds)

¼  cup craisins (dried cranberries)

¼ cup mini chocolate chips

½ teaspoon sea salt

¼ teaspoon ground cinnamon


Preheat oven to 350 degrees F and line baking sheets with parchment of silicone mats.


Place the peanut butter, applesauce, honey, and eggs in the bowl of a stand mixer.  Beat until smooth.


Add the oats, flax, chia seeds, sea salt, and cinnamon.  Stir to mix.  Allow to set for 2-3 minutes to thicken.


Stir in the almonds, pepita, craisins, and chocolate chips.


Scoop onto lined baking sheets.  Bake for 15-18 minutes or until browned around the edges and no longer wet looking.


Cool completely on wire racks, then store in an airtight container.
