Confetti Chocolate Chip Cookie Cupcakes

These are the cutest little cupcakes!


They start off with a chocolate chip cookie cupcake.  Next, they’re topped with a cookie dough frosting - there’s no actual dough in the frosting, but they manage to taste just like cookie dough!  Try not to just eat the whole batch before frosting!


Finally, mini chocolate chip cookies, chocolate chips, and sprinkles make them into a party!


They’re so cute and an absolute crowd pleaser!



Confetti Chocolate Chip Cookie Cupcakes


Cupcakes

1 white/vanilla cake mix

1 package vanilla pudding mix (4 serving size)

1 (8 oz) container sour cream

4 eggs

1 cup water

¾ cup oil

1 teaspoon vanilla extract

½ cup mini chocolate chips


Cookie Dough Frosting

¾ cup butter (1 ½ sticks), softened

¾ cup vegetable shortening

½ cup brown sugar

3 ½ cups powdered sugar

1 teaspoon vanilla extract

1 teaspoon butter extract

¼ teaspoon salt

Mini Chocolate Chip Cookies

Sprinkles


Preheat the oven to 350 degrees F (not convection) and line muffin tins with paper liners.


Mix all cupcake ingredients (except the chocolate chips) together until smooth.  Fold in the chocolate chips and divide between the prepared liners.


Bake in the preheated oven for 18-22 minutes or until the tops of the cupcakes are lightly browned.


Move to wire racks and cool completely.


To make the frosting:

Beat the butter and shortening together until smooth.  Add the brown sugar and mix until smooth.


Finally, add the powdered sugar, extracts, and salt and beat until smooth.


Place the frosting in a piping bag fitted with a large tip.  Pipe frosting onto cupcakes.  Sprinkle with mini chocolate chips and sprinkles.  Top with  mini cookies.
