Eggless Mini Gender Reveal Cupcakes

I was so excited to make these cupcakes for my co-worker!  She was having a gender reveal for a large group and had one guest who was allergic to eggs.  I’ve had my fair share of making dairy free or gluten free cupcakes, but this was my first request for egg free!



I’m still big into doctoring a cake mix, so I sought out an eggless doctored cake mix.  Eliminating eggs from a cake means sacrificing some structural integrity.  In an attempt to combat this, yogurt and additional flour are added to the mix.  Additionally, even though a standard cake mix is used, it only makes half the amount of cupcakes.


The cupcakes were absolutely delicious and so light and fluffy!  In fact, almost too light and fluffy.  Since I made these into minis and then hollowed them to add the gender reveal sprinkles, they had to be very carefully removed from the liners so as not to reveal too early!


I don't have the reveal in these photos...but...it's a boy! And even more exciting - he's due today! Welcome to the world little one!


Eggless Vanilla Mini Cupcakes

Adapted from Mommy’s Home Cooking: Simply Eggless


1 box white cake mix

¼ cup flour

1 cup milk

½ cup canola oil

¼ cup vanilla yogurt


Preheat oven to 350 degrees F and line two 24-cup mini cupcake tins with paper liners (alternately, line one 12-cup regular muffin tin or grease one 8-inch cake pan).


Place all ingredients into the bowl of a stand mixer fitted with the paddle attachment.  Mix until combined.  Divide the batter into the prepared tins.  Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean and the tops are lightly browned.  Cool before frosting.



Buttercream Frosting


1 ½ cups vegetable shortening

6 cups powdered sugar

1 tablespoon meringue powder

Dash of salt

1 teaspoon butter extract

1 teaspoon vanilla extract

6-8 tablespoons water

Food coloring, as desired.


Mix together all frosting ingredients, adding enough water to reach desired consistency.  Tint as desired and place into a piping bag fitted with a large tip.


To make gender reveal cupcakes, use a clean large piping tip to remove a small amount of cake from each cupcake.  Fill with colored sprinkles or frosting.  Pipe frosting to cover the reveal!
