Frito Pie


Today’s Sunday Funday is all about corn chips!  When I think corn chips, I think tortilla chips or Fritos!  For today’s recipe I went the Frito route.  I thought about making a delicious dip to go with them (like 7-Layer Dip - so delicious with Fritos!) but decided to make a Frito Pie instead!


It’s called Frito Pie but it’s the easiest pie you’ll ever make - really more of a hot dish/casserole than anything else.


What makes it a pie of sorts is that Fritos are placed at the bottom of the dish as a “crust”, topped with filling (which soaks into the crust), then topped with cheese and even more Fritos…pie indeed.

My kids were pretty skeptical about this one (especially since i used Chili Cheese Frito - ok tangent, I used Chili Cheese Fritos because I bought one of those boxes with those small bags of chips in all sorts of different flavors and the kids never pack the Chili Cheese Fritos is their lunch bags…so I “forced” them to eat them in this casserole - haha!  And they found that they quite liked them).


Anyhow, despite the original skepticism, this one was a hit.  It came together quickly and was full of flavor - perfect for a busy (and cold) week night!

Frito Pie

Adapted from Paula Deen


1 pound lean ground beef

1 onion, diced

2 cloves garlic, minced

2 teaspoons chili powder

½ teaspoon ground cumin

¼ teaspoon black pepper

Dash of chipotle pepper

1 (15 ounce) can tomato sauce

1 (15 ounce) can pinto beans

1 cup frozen corn

4 ounces chili cheese corn chips

1 cup shredded cheddar cheese


Preheat oven to 400 degrees F.


In a large skillet, cook the onion and beef until the beef is browned and onion is tender.  Stir in garlic and cook for another minute.


Stir in the spices, tomato sauce, beans, and corn.  Bring to a boil, then cook, stirring frequently, until the sauce is thickened.


Spread half of the chips over the bottom of a small casserole dish.  Pour the beef mixture on top.  Sprinkle with cheese, then bake in the preheated oven for 10 minutes or until the cheese is melted.  Top with remaining corn chips and serve.

  1. I have probably heard of Frito pie before. But before today's event, I didn't even really know what that meant. Now I have a few recipes to try. What fun!
