This time of year is crazy.
Piano recitals and Christmas plays. Overtime at work. Buying presents and preserving Christmas magic for kids that may or may not (but probably not) believe anymore.
On these days a fast meal is a must. Pasta is always a win and if veggies are involved in some way, all the better.
This soup hits all the marks, plus it’s tasty enough to serve to guests and pretend like it took a lot of time to put together!

Tortellini Soup with Sausage & Kale
Adapted from The Modern Proper
1 lb ground Italian Sausage
1 small onion, minced
4 cloves garlic, minced
6 cups chicken stock
1 (15 oz) can tomato sauce
1 teaspoon salt
1 bunch kale, stems removed, chopped
20 ounces cheese tortellini
1 pint half & half
Place the sausage & onions in a large soup pot over medium heat. Cook until the sausage is browned and broken up and the onions are soft. Add the garlic and cook for a minute more.
Stir in the chicken stock, tomato sauce, and salt. Bring to a simmer. Add the kale and tortellini. Cook for 5 minutes (or according to package instructions for tortellini). Stir in the half and half and heat through before serving.
