For me, one of the best parts of spring is the sudden abundance of fresh fruits and vegetables that start appearing in the produce aisle at the grocery store.
One of my favorite spring vegetables is asparagus, though my children would wholeheartedly disagree. They can’t stand asparagus, but if it’s at the table, they’re required to try it. I keep trying to change it up to make asparagus more palatable for them.
The attempt this time included bacon! But, as expected, the bacon was picked out and eaten first and the asparagus pushed around the plate (they still had to eat it).
But hey, when kids are picky that means more for me, right?
Sautéed Asparagus with Bacon & Parmesan
¼ pound thick cut bacon, fried crisp and diced
1 tablespoon butter
1 pound asparagus, ends trimmed and cut in half
2 tablespoons grated parmesan
Pepper, to taste
Heat the butter in a skillet over medium heat. Once melted, add the asparagus and sauté for 5-7 minutes until crisp tender.
Remove from heat. Stir in the bacon pieces and top with parmesan and pepper. Serve immediately.
Asparagus is my favorite vegetable so I would be happy to eat their share.
