Kentucky Hot Brown Sandwich

The Kentucky Derby is this weekend, so it’s the perfect time to try out a delicious, cheese-smothered Kentucky Hot Brown Sandwich!

This one is perfect if you have some left over turkey (though you can use deli meat in a pinch)

In this sandwich, piles of turkey are stacked on pieces of toast, then smother with tomatoes, bacon and a cheesy sauce and stuck under the broiler.  This is definitely an eat it with a knife and fork type of sandwich!

Cheese Sauce

1 tablespoon butter

1 tablespoon flour

½ cup milk

⅛ teaspoon pepper

⅛ teaspoon worcestershire sauce

1 tablespoon parmesan cheese

⅓ cup shredded cheddar cheese

Sandwich

2 thick slices of Wheat Bread, toasted

1 cup roast turkey

2 thick slices beefsteak tomato

2 slices thick cut bacon, cooked crisp

1 tablespoon grated parmesan cheese

To make the cheese sauce, melt the butter in a small saucepan over medium heat.  Whisk in the flour and cook for 1 minute.  Slowly whisk in the milk, allowing the mixture to thicken.  Season with worcestershire and pepper.  Stir in the parmesan and cheddar until melted.

To make the sandwiches, set the oven to broil.

Place the toasted bread onto a baking sheet.  Top with roast turkey, a big scoop of cheese sauce, then tomatoes and a sprinkle of parmesan.

Broil for 5 minutes or until the cheese sauce is bubbly and browned.  Top with bacon slices and serve.
