It’s time to pull up a bowl of popcorn for this month’s Food n’ Flix! This month is hosted by Camilla from Culinary Adventures with Camilla. Camilla chose something a little different this month: a restaurant documentary, Spinning Plates!
Spinning plates follows 3 very different restaurants and the people that make them: a high end fusion restaurant chasing its 3rd Michelin star, a century old rural family-run diner that is the heart and soul of the community, and a new Mexican restaurant run by a young family that is brand new to the restaurant industry.
Each of these stories shows the triumphs and failures of the restaurant industry and the obstacles these people face (a dire health diagnosis, devastating fires, and the threat of foreclosure) as they work to make their dreams a reality.
Though the focus of this documentary was on the people, there was no shortage of foodie inspiration to be seen. There were gravity defying small plates, down home fried chicken, and authentic Mexican food, among so much more to cheese from!
Ultimately, I decided to go a little Tex-Mex and make Huevos Rancheros Tacos, inspired by the Mexican restaurant as they introduce breakfast tacos to their menu in an effort to bolster their morning restaurant traffic.
This delicious dish is quick enough to make for breakfast or hearty enough for dinner. It is also a great way to stretch leftovers to feed a crowd!
Huevos Rancheros Tacos
1 teaspoon bacon drippings
1 teaspoon butter
1 large potato, diced
½ red bell pepper, diced
¾ cup leftover Pork Carnitas or Qdoba Style Mexican Chicken
2 fried eggs
Tortillas (flour or corn)
Heat the butter and bacon drippings over medium heat. Add the potato and cook until browned on all sides and tender. Add the peppers and chicken and cook until heated through.
In a separate skillet, cook the eggs over easy.
Warm the tortillas and place on plates. Top with potato mixture, followed by fried egg. Follow with the remaining toppings and serve.
