Garlicky Baked Asparagus


Well, well, it’s time for this month’s Fantastical Food Fight!  I didn’t participate last month, I totally had a recipe ready to go, then I completely flaked out and didn’t post it at all.  Ahh!  Silliness!

Anyway, I’m back and ready to go for this month’s Asparagus food fight! 

I love asparagus.  The kids…not so much.  They’ll grudgingly eat it, but still call it “ick-sparagus” Haha – we’ll get there one of these days!


Normally, I just sauté asparagus and season it with salt and pepper, because sometimes simple is best.

For this challenge I went for oven roasted, plus garlic and fried onions!  It was definitely delicious and the kids judged it “a bit better than usual” haha – tough crowd!

Garlicky Baked Asparagus
Adapted from Southern Living

1 pound asparagus, woody ends trimmed
1-2 tablespoons olive oil
Salt & pepper
2 cloves garlic, minced
2-3 tablespoons French fried onions


Preheat the oven to 400 degrees F.

Place the asparagus on a rimmed baking sheet.  Drizzle with olive oil and season with salt and pepper.  Bake for 5 minutes.

Sprinkle the asparagus with minced garlic and fried onions and bake for another 5 minutes.  Remove from the oven and serve.

  2. I never thought about adding fried onions. This looks good. Is that a Silpat mat you are baking on? I love mine.

  5. I love oven roasted asparagus - it's probably my favorite way to prepare it. Always with s&p, garlic, and dried minced onions, but I will for sure have to try French-fried onions - YUM!
