This past year, Dude had a
classmate who doesn't eat gluten, so was my challenge whenever I sent treats to
school to find something delicious that the whole class can enjoy AND doesn’t
require any special ingredients.
Also – I realize that I’m
super fortunate that we attend a school where we can still bring homemade
treats!
Anyhow, I wanted to bring
cookies but didn’t want to buy any specialty flours, so I went on the hunt for
a fabulous gluten-free cookie using everyday ingredients.
These cookies are a total
sugar bomb – but hey – no gluten!
You definitely want to
make these small, because they are intensely rich (but super delicious!)
So if you’re looking for a
gluten-free splurge in a not so gluten free kitchen…these are the cookie for
you!
Flourless Chocolate
Brownie M&M Cookies (Gluten Free)
Recipe slightly adapted
from Barefeet in the Kitchen
3 cups powdered sugar
¾ cup cocoa powder, sifted
1 tsp salt
1 egg
2 egg whites
2/3 cup semi sweet
chocolate chips
2/3 cup mini M&M
candies
Preheat the oven to 350
degrees F.
Place the powdered sugar,
cocoa powder, and salt in the bowl of a stand mixer. Stir to mix.
Add the eggs and stir
until thoroughly mixed. Stir in the
chocolate chips and M&Ms.
Line baking sheets with
silicone mats or parchment paper. Scoop
tablespoonfuls of batter onto the prepared baking sheet, about 2-inches apart.
Bake for 12-15 minutes or
until the cookies are set and the tops of the cookies look cracked.
Cool on baking sheets,
then remove and store in an airtight container.
