Pumpkin Spice Waffles


Halloween is one of my favorite holidays for making fun themed foods for the kiddos!  And though I hate scary movies or basically anything scary about Halloween, I absolutely love dressing up.  Cosplay is seriously the best.  This year, I am outdoing myself by having a total of 3 separate Halloween costumes for various parties and functions we’re heading to!  It’s going to be awesome!  Once they’re all set, I will be sure to share them!

Anyhow, back to the food.

I decided that I wanted to make pumpkin waffles and make them look like little pumpkins.  Except that I only have a Belgian waffle maker, so my pumpkins were going to be square, not round.


Enter the librarian in me:

I made our little pumpkins into Spookley the Square Pumpkin!




Spookley is one of those children’s books that focuses on being true to yourself and that different is ok.  Kids love the story – especially around Halloween! 

It was really fun to hand my boys copy of the book (Dude read it out loud to Spud) while I put the finishing touches on our little Spookleys!

And even if you don’t give these waffles the Spookley treatment, they’re totally delicious.  If you’re a big pumpkin or pumpkin spice fan, you definitely need to make these asap!

Pumpkin Spice Waffles
Adapted from Taste of Home

1 ¼ cup whole wheat flour
½ cup all purpose flour
2 tablespoons ground flax
2 tablespoons brown sugar
1 ½ teaspoons baking powder
¼ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves
3 tablespoons butter, melted
1 cup pumpkin puree
3 eggs
2 cups buttermilk


Preheat a waffle maker.

In a large bowl, whisk together the flours, flax, brown sugar, baking powder, baking soda, cinnamon, ginger, and cloves.

Whisk together the butter and pumpkin.  Add in the eggs and buttermilk and whisk until combined.

Pour the wet ingredients into the dry and stir to combine.

Spray the waffle maker with nonstick spray and cook waffles according to manufacturer instructions.

If desired, create faces with marshmallows and chocolate chips!


Serves 6.

Pumpkin Spice Waffles are even more delicious when they look like Spookley the Square Pumpkin!
Ingredients

  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 3 tablespoons butter
  • 1 cup pumpkin puree
  • 3 eggs
  • 2 cups buttermilk
Instructions
