Oatmeal Applesauce Muffins #appleweek

For this recipe, I decided to make a yummy protein muffin for my kids’ after school snacks or cold lunches!

These muffins are so perfect for snacks, with or without chocolate chips.  They are not overly sweet, so I have no problem sending them for lunch either!.

Oatmeal Applesauce Muffins

1 ¼ cup quick oats
½ cup flour
¼ cup flax
¼ cup vanilla protein powder
1 tsp baking powder
¾ tsp ground cinnamon
Pinch salt
¾ cup applesauce
2 eggs
2 tablespoons honey
¼ cup chocolate chips, optional


Preheat the oven to 350 degrees F and line a muffin tin with paper liners.

In a large bowl, whisk together the oats, flour, flax, protein powder, baking powder cinnamon, and salt.

In a separate bowl, whisk together the applesauce, eggs, and honey.

Stir the wet ingredients into the dry.  Stir in chocolate chips, if desired.

Bake in the preheated oven for 15-20 minutes.

Makes about 15 muffins.
